They make everything here, from the wrappers to the broth. If thirty-eight dishes is a lot to choose from, pick a lane first: things they fold (mandu), things they cut (noodles), and rice.

Mandu is not one thing. The Korean kind is known for a chewy wrapper, and two fillings lead the field: pork and kimchi. Koreans drop them into a pot of ramyeon, or toss them in sauce and eat them mixed.

How to enjoy Kang's Mandu

Get the most out of Kang's Mandu.

  1. One plate, one bowl

    This is a mandu house and a noodle house at the same time. On a first visit, order one plate of mandu and one bowl of noodles and share them. If there are two of you, the D sets are exactly that pairing.

  2. Don't put the gravy mandu in whole

    The house signature, gogi-yukjeup-mandu, holds hot broth inside. Split it with your chopsticks and let the steam out first.

The owner

Kang's Mandu is in its second generation, and the man behind the counter now is the second. Asked what he holds to, he answered in four words: Good ingredients. The same taste. Meaning that whoever came yesterday and whoever comes today eat the same dish.

Asked what a first-time guest should order, he wrote down three: mandu, kalguksu, tteokbokki. Nothing showy, nothing expensive. Why those three is answered by the last thing he added. This is the food Koreans eat most.

Mandu, kalguksu, tteokbokki. In Korea these dishes have a name of their own: bunsik (분식). Not food for an occasion or for guests, but the food Koreans reach for most often and most easily.

A shop that points someone looking for something special toward the most ordinary thing on the board. That is this place in one line.
