An intimate dining room in a converted home
L'Essence occupies a converted home rather than a purpose-built restaurant. The intimate room has a counter facing the open kitchen and just a few tables, keeping the chef close enough to introduce each plate in person. Settle in as though you had been invited to dinner at someone's home.

The chef, L'Essence
The chef spent years working abroad in Australia, Denmark, and finally France. After returning to Korea during the pandemic, they spent two years in Jeolla Province studying Korean ingredients before opening L'Essence in their hometown of Busan.
The name is French for essence. Delicious food, ingredients at their seasonal best—the essence of flavor. The restaurant occupies a modest converted house, with the focus kept on what matters most: warm hospitality and relaxed, attentive service.
Seasonality comes first. Seafood and vegetables are sourced as close to Busan as possible, while part of each harvest is fermented, pickled, or preserved for later use. When plums come in, they become a main ingredient, but we also preserve them at their best and bring them out in another season. Bringing fresh and preserved ingredients together creates several layers of flavor on a single plate.
Rather than insisting on ingredients from France, the chef gives the best local produce a personal interpretation. We are different from a typical French restaurant. I want this to be a place where even a French traveler visiting Korea would feel at home dining. The chef has a simple wish for international guests.
