How the meal flows

Cold dishes, warm dishes, then stew

Know the rhythm of the meal and every new plate makes more sense.

  1. Start with the cold dishes

The meal starts with cold dishes such as salad, small starters, seafood and sashimi. All courses include sekkoshi, thinly sliced bone-in fish, in midwinter and mulhoe in summer. Try the white fish before the richer red fish, with a little soy sauce and wasabi.

  2. Then come the warm dishes

Clear soup is followed by warm dishes, including grilled dishes and tempura. Kiku includes snow crab and cheese-baked shrimp; Sakura includes grilled freshwater eel and cheese-baked shrimp. See each course above for its full menu.

  3. Finish with sushi and stew

Nigiri signals that the meal is nearly over. Matsu and Ran finish with spicy maeuntang; Kiku and Sakura with a clear jiri. Save a little rice if you would like to stir it into the broth.

Before your visit Songwon specialises in aged sashimi rather than fish prepared live to order. All courses include sekkoshi in midwinter and mulhoe in summer. Leafy vegetables for wrapping the fish are not provided.

Inside

Namcheon-dong's cherry blossoms, brought indoors

Cherry branches sweep across the ceiling, while bamboo and small lights give each table a little privacy. The owner recreated Namcheon-dong's much-loved springtime blossom street indoors, worried that redevelopment might one day erase the familiar view. A spacious hall and private rooms make Songwon a comfortable choice for groups.

The owner

The story behind 36 years of Songwon in Namcheon-dong.

The owner has loved cooking since childhood and has spent years exploring different kinds of food. He began professionally with dumplings, then worked with chicken, pork, beef, and seafood before settling on Japanese cuisine. Japanese food is the final stop in this business. Grilled, fried, simmered, raw—it all comes in one course, like a gift box. Guests know exactly what to choose.

Songwon is written with the characters for pine (松) and garden (園). Like a pine standing in a wide garden, it expresses our hope to put down roots and stay for years to come. The blossoms across the ceiling bring Namcheon-dong's famous cherry-lined street indoors—a way to preserve it should redevelopment change the neighbourhood.

After thirty-six years in the same spot, Songwon is one of the Japanese restaurants Busan's independent taxi drivers recommend when passengers ask. Gwangalli Beach is a five-minute drive away, perfect for a walk after dinner. The warm-hearted owner is also happy to suggest a nearby place to stay. Namcheon-dong once had eight Japanese restaurants; with government offices close by, it remains a favourite meeting place for long-time regulars. I hope Songwon becomes part of a happy memory from your trip.
